“This wine represents a warmer year showing great concentration. Aromas of red bell pepper and roasted red bell pepper are very characteristic of this vintage. On the nose, the slightly menthol notes, typical of the variety, combine with floral notes such as violets, denoting an elegant primary expression. The aging aromas are subtle and well integrated: coconut milk, tobacco, coffee and cedar. The entry on the palate is soft, round, giving an almost warm sensation. Upon arrival at the winery, the grapes were destemmed and crushed into concrete and stainless steel tanks, without over crushing the grapes. After yeast inoculation, they were co-inoculated with selected lactic acid bacteria for malolactic fermentation. Part of the must fermented inside truncated cone-shaped concrete vats. The wine was left to macerate for an additional 7 days for structure and longevity. At the end of the post-fermentation maceration, the wine is devatted and pressed, separating press fractions according to quality.
