The deep, well-drained gravelly soils from Maipo Valley are ideal for this Cabernet Sauvignon. The grapes come from different vineyards, mostly from the southern edge of the valley (Isla de Maipo and Hacienda Chada), but also from the city of Santiago (commune of Puente Alto). The average yields were 7 tons per hectare.
After a warm growing season, the grapes were handpicked between March 20th and April 10th, 2023. After the harvest, the grapes were selected, destemmed and pressed so that they could be taken into stainless steel tanks, where they were inoculated with selected yeasts and left for two weeks on average temperatures of 27ºC / 81ºF. Once fermentation was completed, the must was subjected to an extra week of post-fermentation maceration.
