Tasting Notes:

Intense blackcurrant and blackberry sweetness lift out of the glass over layers of black olive and molasses richness. The palate is concentrated, and textured showing chewy tannins well integrated with subtle amounts of French Oak. This wine will benefit from cellaring for 5-10 years.

Bright ruby. Lively aromas of red- and blackcurrant, cherry, minerals and tobacco, along with a smoky undertone. Red fruit flavors are framed by dusty tannins and pick up a smoky licorice note with air. Distinctly fresh, with a slightly firm edge to the finish.

Winemaker Notes:

Harvested in the early morning and immediately crushed into stainless steel fermenters to prevent oxidation and to ensure that the fresh fruit flavours were retained. Fermentation to dryness took place on skins with gentle ‘pumping over’ three times per day during the height of ferment for optimum tannin and colour extraction. After pressing, the wine was induced into a secondary fermentation for a soft, round palate. The final blend shows a wine with depth and structure with subtle French oak influences and classic bright fruit. Our vines are watered from unpolluted rain of the Southern and Indian Oceans. We start in the vineyard by allowing natural predators to control pests.Several techniques are used to optimize vine balance within the vineyard to produce maximum quality from our fruit. Pruning to ensure vines carry optimum bud number. Shoot thinning in early Spring to minimize shading within the vines. Bunch thinning prior to ripening to remove fruit that is not within Wildberry.
